Since its arrival to our stony shore nearly two years ago, Brighton Gin has taken not only our city but the rest of the UK by storm. This small batch gin is made locally with fresh juniper, lime, orange peel and a few other secret spices, many of which are locally sourced, and it makes for a mean seaside tipple

The Pelirocco team had the pleasure of visiting the Brighton Gin Distillery, and meeting the lovely founders Kathy and Helen where we learned all about the conventional and some unusual ingredients that lovingly make up this new local legend on the Brighton bar scene.

Much like Pelirocco, Brighton Gin is an independent brand full of exciting ideas and an original approach, therefore we thought it would be only fitting to team up with the brand and create some cocktails.

Our Bar Manager Alis has created two original Brighton Gin cocktails and put a twist on the classic Tom Collins – ‘Brigh-Tom Collins’ – containing tropical flavours to compliment the herbs used in Brighton Gin. It even matches the classic peppermint green colour of Brighton’s seafront railings and the Brighton Gin bottle!

One of our latest creations is the Palace Pier cocktail, which is a very popular addition to our new menu, containing homemade cucumber Brighton Gin, homemade parma-violet Stolichinya Vodka, fresh lemon juice and sugar, served with a stick of good old fashioned Brighton rock. This refreshing and unusual blend is proving popular with our guests and Brighton locals alike.

The third new recipe is our Royal Pavillion cocktail, which combines Brighton Gin and fresh ginger with orange, ginger ale and Juniper bitters that compliment the orange peel used in the gin’s distillation process.
